What's involved?

Unit 1 – Introduction to Food Allergens

The first unit looks at what a food allergen is, the signs and symptoms of an allergic reaction, the 14 named food allergens, food intolerance, Anaphylaxis, Coeliac Disease, how to deal with a severe allergic reaction, food handler responsibilities and why safe food practices are so important.

Unit 2 – Food Allergen Law

In this unit we look at food safety legislation, food labelling regulations, The Food Information for Consumers (FIC) Regulations, Natasha’s law, how food safety is enforced, due diligence, prepacked foods, foods prepacked for direct sale (PPDS), Ingredient lists, loose foods, distance selling and staff training.

Unit 3 – Food Allergen Contamination Control

In this unit we look at allergenic cross-contamination, Hazard Analysis and Critical Control Points (HACCP), reducing the risk of cross contamination during delivery, storage, preparation and transportation, how allergenic cross contamination can be reduced through cleaning and personal hygiene.
